Leftover Turkey Recipes: What to Cook After Thanksgiving

Beat the leaftover turkey blues and think beyond the sandwich with casseroles, turnovers and salads.

Turkey Day is over—now what? Thanksgiving leftovers can become a blessing or a curse. Turkey sandwiches can be good for a while, but they get boring fast. Leftovers should begin with a plan. Pick recipes that are easy to make while creating a new dish that isn't immediately recognized as including leftovers. Food historian Suzanne Corbett offered some tasty ideas during last year's Thanksgiving holiday.  Here are a few options: Turkey Croquettes Mix two parts of leftover dressing with one part finely chopped turkey. Moisten with beaten egg and a little milk, broth or leftover gravy. Shape into balls and roll in Panko-style crumbs.   What am I thankful for? My health, first of all. A year ago, I was evacuated from the teeny-tiny country of Moldova with a long list of strange health problems. Now, after a lot of work with my team of doctors, a personal trainer, my friend and my family, I obtained a diagnosis of Crohn's disease and I'm working to bring my disease under control. There's nothing like a health problem to teach you how precious health really is. I'm also greatful for my puppy, Persie. (See the picture??) She's my first dog, and I'm still learning how to manage all her energy. But I love her, and I'm glad the boyfriend and I brought her into our home. Lambert-St. Louis International Airport Expects Increased Holiday Traffic

Officials urge Thanksgiving travelers to come early and be prepared.

Lambert-St. Louis International Airport (Lambert) officials said they expect a 10-15 percent daily increase in passengers each day through the Thanksgiving holiday. In its annual Thanksgiving travel forecast, AAA predicts 43.6 million Americans will travel at least 50 miles from home over the holiday, up just 0.7 percent from last year. The biggest single travel day of the holiday weekend for Lambert is projected to be the Sunday following Thanksgiving. Officials at Lambert-St. Louis International Airport are urging passengers traveling through the airport to show up early, be patient and prepared. Officials add that people picking up guests should consider parking away at designated lots. “The busy holiday travel season will mean more …

Safely Deep-Frying a Holiday Bird

Deep-frying a turkey can be delicious, but dangerous without the right safety tools.

Each year, families gather around a roasted or baked turkey for the holidays. Some families decide to go outside of the box and deep-fry turkeys for the holidays, which is when things get more serious. I grew up with my dad frying turkeys for the holidays. As newlyweds, my wife and I will fry a turkey for our first Thanksgiving together and may continue the tradition. Several dangers can mount from deep-frying a turkey, though. More than 4,000 fires occur on Thanksgiving across the country, according to the U.S. Fire Administration. There's a reason Underwriters' Laboratory refuses to list a single turkey fryer: they're inherently dangerous. I doubt this matters to many of the people who enjoy deep-fried turkey, but even doing it "safely" as described above includes a pretty good chance at hurting someone or burning down your house.
